Gluten Free Banana Nut Muffins




INGREDIENTS

Dry

  • 1/4 cup brown sugar

  • 1/4 cup sugar in the raw

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1 cup gluten free flour

  • 1/2 cup almond flour

  • 1/2 cup gluten free oats

  • 1/2 cup of nuts (walnuts or pecans are really good)

  • pinch salt


Wet

  • 3-4 very ripe bananas

  • 1/2 cup coconut oil soft

  • 2 eggs

  • 1/2 teaspoon vanilla

INSTRUCTIONS

  1. Preheat oven to 350

  2. In a large bowl mix together all dry ingredients

  3. In another bowl mash the bananas and add the wet ingredients

  4. Add dry ingredients to wet and mix till smooth

  5. Fill greased or paper-lined muffin cups half full

  6. Bake for 50 minutes

  7. Cool for 10 minutes; remove from pan to a wire rack to cool completely
