Lemon Pistachio Bars

Gluten free, dairy free, and great low sugar snack.

Pistachio are low in calories and high in protein. Good source of fiber too.

Ingredients

Crust

  • 1 1/2 cups almond flour

  • 1 cup pistachios

  • 2 dates

  • 1 1/2 tablespoon coconut oil

  • pinch salt

  • optional: 1-2 tablespoons powdered sugar


Filling

  • 1 cup lemon juice

  • 6 eggs

  • 1/3 cup pure maple syrup

  • 1 tablespoon lemon zest

  • 3 tablespoon cornstarch


Instructions

  1. Preheat oven to 325

  2. Line 9X13 pan with parchment paper with ends hanging over on the long end

  3. Mix the crust ingredients together in a food processor then press into the lined 9x13 pan, Bake crust for 10 minutes

  4. Mix together the filling, add to pre-baked crust then bake for 20 minutes

  5. Let the Lemon Pistachio bars cool for 1-2 hours, then cool in the fridge for 2 hours

  6. When you are ready to serve, remove the parchment paper by lifting the ends, then slice, and flip over

  7. Optional - dust bars with some powdered sugar
