PESTO THREE WAYS

Pesto is a great addition to any meal. Goes well with pasta, potatoes, bread, salads and protein (fish and shrimp are my favorite), sandwiches. Chose different nuts to have different flavors or consider adding in kale with your basil leaves.


Pro tip: Make as a condiment and store in the fridge up to two weeks.


Pesto can be a good source of Vitamin A

INGREDIENTS (makes 1/2 cup)

  • 2 cups of basil leaves (or use baby kale, or combine together)

  • 1/2 cup olive oil

  • 2 garlic cloves

  • 1/4 cup of nuts (your choice)

  • 1/4 teaspoon salt and pepper each

  • Juice of 1 small lemon

  • NUTS: you choose: 1/2 cup of sunflower seeds or pistachios or walnuts

DIRECTIONS

  1. Puree all together.

  2. Taste.

  3. Add extra salt if needed, if too dry, add more olive oil.

  4. If too wet, add more basil leaves.
